Duck Recipes for Thanksgiving

1. Roast Duck with Apple Cranberry Stuffing: Preheat oven to 375°F (190°C). Pat dry a 4 lb duck, and season with salt and pepper inside and out. Place on a roasting rack in a shallow roasting pan. In a bowl, combine 1 diced apple, 1/2 cup cranberries, 1/2 cup chopped onion, 2 tablespoons melted butter, 1 teaspoon dried sage, 1/2 teaspoon salt, and some freshly ground black pepper. Fill the duck cavity with the stuffing mixture and close the opening securely with kitchen twine or toothpicks. Roast for about 1 hour and 30 minutes or until golden brown and the juices run clear when pierced with a fork. 


2. Honey Balsamic Glazed Duck: Preheat oven to 400°F (200°C). Rub 2 tablespoon olive oil all over a 4 lb duck. In a small saucepan over medium heat combine 1/3 cup honey, 3 tablespoons balsamic vinegar, 1 minced garlic clove and 1⁄4 teaspoon of sea salt. Simmer for 5 minutes until bubbling. Brush the glaze over the duck and bake in preheated oven for 45 minutes or until internal temperature reaches 165°F (74°C)

3. Maple Orange Braised Duck: Heat 2 tablespoons of butter in a large skillet over medium heat until melted. Add a 4 lb duck to the skillet skin side down and cook for 5 minutes until golden brown. Turn the duck over then add 3 cups orange juice, 1⁄2 cup maple syrup, 1⁄4 teaspoon ground cinnamon, pinch of nutmeg and season generously with salt and pepper to taste. Reduce heat to low then cover skillet with lid allowing it to simmer for about an hour or until the internal temperature of the duck is at least 165°F (74°C). Serve hot topped with extra orange slices as garnish if desired.
